Flu season is upon us. Prepare yourself, and your family, now and hopefully you can minimize your risks this year.

Here are some tips to help you get ready for flu season:

  • Wash your hands frequently! You must wash with warm soapy water for a minimum of 10 seconds to effectively kill germs. If you have school aged children, impress upon them the importance of good hygiene, and have them wash their hands as soon as they arrive home from school
  • Disinfect your house regularly. Spray the surfaces of your home with a mild bleach solution of 2-5% to kill most viruses and germs.
  • If you are high risk for the flu, get vaccinated.
  • Eat a well balanced diet to keep your immune system in top form. It can make a difference.
  • Get plenty of rest. A lack of sleep can lower one's immune system making it harder to fight off illnesses.
  • Stock up on all the regular cold and flu remedies. Nothing worse than getting ill and having to run out to the store because you have no Nyquil.
  • If someone in your household gets the flu, see your doctor and ask about Tamilflu or Relenza. Use of these meds by uninfected people in your house can help prevent them from coming down with the illness. You must begin taking them upon exposure for best results.

Football season is upon us! Fall is in the air. Time for hearty dips and spicy chili to warm us up from the inside, out!

Here's a few recipes that are sure to be a hit with your favorite armchair quarterback.

Velveeta® Spicy Cheeseburger Dip
1 lb. (16 oz.) Velveeta Pasteurized Prepared Cheese Product, cut up
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/2 lb. ground beef, cooked, drained
1/2 cup sliced green onions

Mix all ingredients except onions in large microwaveable bowl.
Microwave on HIGH 5 min. or until Velveeta is completely melted, stirring after 3 min.
Stir in onions.

Baked Onion Dip

2 medium sweet onions, finely chopped (about 2 cups)
1 pkg. (6 oz.) Hickory Smoked Pasteurized Process Swiss and Cheddar Cheese, shredded
1/2 cup Mayonnaise
1/4 cup Real Bacon Bits
1/2 tsp. hot pepper sauce (optional)
1/4 cup Grated Parmesan Cheese

Preheat oven to 350°F. Mix onion, process cheese, mayo, bacon bits and hot pepper sauce until well blended. Spoon into lightly greased 1-quart baking dish or 9-inch pie plate. Sprinkle with Parmesan cheese. BAKE 15 minutes or until lightly browned and bubbly. Serve as a hot dip with crackers.

Cheeseburger Chowder

1 pound lean ground beef
2 medium potatoes, peeled and cubed, about 2 cups
1/2 cup chopped celery
1/4 cup chopped onion
2 tablespoons chopped green pepper
1 tablespoon beef bouillon granules or beef base
1/2 teaspoon salt
1 1/2 cups water
2 1/2 cups milk
3 tablespoons flour
1 cup shredded sharp Cheddar cheese

In a 3 to 4-quart saucepan brown beef. Drain off excess fat. Stir in cubed potatoes, chopped celery, chopped onion, chopped green pepper, bouillon or base, salt, and 1 1/2 cups water. Cover and bring to a boil; reduce heat and simmer until vegetables are tender, about 15 to 20 minutes.
Blend flour with 1/2 cup of milk. Add to saucepan along with the remaining 1 cup of milk. Cook and stir until thick and bubbly. Add cheese; heat and stir until cheese is melted.

I see we are talking recipes this week! How about some quick and easy ideas for those pesky school lunches?

Snack Mix Recipe

8 cups Chex cereal (Wheat -- Rice And Corn)
1 cup M&M candies
1 cup Raisins
2 cups pretzels, small rounds work best

Combine and enjoy!


Nuts 'N' Bolts Snack Mix

4 cups Cheerios® cereal
2 cups pretzel sticks
1 cup nuts
1/4 cup butter or margarine, melted
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1/2 teaspoon garlic salt

1.Heat oven to 275°F.

2.In ungreased 13x9-inch pan, mix cereal, pretzels and nuts. Stir together melted butter, Worcestershire sauce, paprika and garlic salt. Pour over cereal mixture, tossing until evenly coated.

3. Bake 30 minutes, stirring occasionally; cool. Store in airtight container.


Almond Granola Trail Mix

Nonstick vegetable oil spray
3 cups old-fashioned oats
1 cup slivered almonds
3/4 cup shredded sweetened coconut
1/3 cup sesame seeds
6 tablespoons pure maple syrup
6 tablespoons dark brown sugar - (packed)
1/4 cup vegetable oil
2 tablespoons warm water
1/2 teaspoon salt
1 cup golden raisins

Preheat oven to 250 degrees. Lightly spray rimmed baking sheet with nonstick spray. Toss oats and next 3 ingredients in large bowl. Whisk syrup, brown sugar, oil, 2 tablespoons warm water and salt in small bowl to blend. Pour syrup mixture over oat mixture and stir to combine.

Transfer to prepared baking sheet. Bake until evenly browned, stirring occasionally, about 1 hour 15 minutes. Cool. Transfer to large bowl. Mix in raisins. (Can be made 1 week ahead.)


Tip: To keep snack mixes crisp, store them in airtight containers or heavy resealable plastic food-storage bags, especially in humid weather.

Today's Recipe ~ Apple Cranberry Crisp (Low-Cal and Yummy!)

1/2 cup of flour
1/4 cup of sugar
1 tbsp of sugar (for apples)
1/4 cup brown sugar
1/4 cup of butter or margarine
7 cups of sliced, peeled apples (Golden Delicious works best)
1/4 cup sweetened dried cranberries (optional, if you don't like them, don't include or substitute raisens)
1/2 tsp ground ginger

Mix flour, sugar, and brown sugar together in a small mixing bowl. Cut in the stick of butter until the mixture forms into crumbs.

In a seperate mixing bowl, stir apples, cranberries, ginger, and 1 tbsp of sugar.

Coat an 8 x 8 pan with cooking spray. Place mixed fruit into the pan in an even layer. Sprinkle crumb mixture evenly on top of fruit layer.

Bake at 400 degrees for thirty to thirty-five minutes. Top should be golden in appearance.

Let cool for fifteen minutes, then enjoy!

Aprox. 8 servings, 190 calories per serving, 6 grams fat, 2 fiber

We're In the Mood for Recipes!

Here's another super yummy one for Irish Cream Brownies ~ Enjoy!

Irish Cream Brownies

4 oz. bittersweet chocolate
1 oz. unsweetened chocolate
1/2 cup butter
3/4 cup sugar
2 tsp. vanilla extract
1/4 tsp. salt
3 large eggs
1 cup flour

1/3 cup Irish Cream liqueur
8 oz. white chocolate, chopped

Pre-heat oven to 325 F. Prepare an 8x8 baking pan by dusting a light coating of cooking spray or if you prefer, use butter to coat the sides and bottom.

Melt chocolate and butter together in a heavy saucepan over a medium heat, stirring constantly. Remove from heat and cool slightly.Whisk sugar, vanilla and salt into chocolate mixture, followed by the eggs, one at a time. Continue whisking mixture until it is shiny and smooth. Add flour and whisk just until blended.

Pour batter into prepared pan and level top. Bake for about 35 minutes, or until cake tester/toothpick comes out clean.

Cool completely in pan before working with topping.

For topping, heat liqueur to a boil in a heavy sauce pan. Remove from heat and whisk in white chocolate until it is completely melted and mixture is smooth. Refrigerate until mixture becomes thick enough to spread, stirring occasionally, about 30 minutes.

Spread topping over brownies and refrigerate until cold. Let stand at room temperature for 30 minutes prior to serving.

Thought for Today ~ Nut Season!

With Fall approaching (do you believe that?!) it's prime time for fresh harvest of nuts. Here's a truly yummy recipes using one of my fav's- pecans. Enjoy!

Easy Pecan Pie Bars

1 ½ cups chopped pecans
2 cups unsifted flour
¼ cup brown sugar
1 stick of butter
1 can of sweetened condensed milk (14 oz.)
3 eggs
2 tbsp. lemon juice

Preheat oven to 350. In a large bowl, combine flour and brown sugar. Next, add butter and blend until mixture is a crumb-like consistency. Press mixture onto the bottom of a 13x9 inch baking dish. (It is not necessary to grease the baking dish, but you may wish to spray a coating of non-stick spray prior to pressing the crust in.)

Bake crust 15 minutes.

Combine pecans, sweetened condensed milk, eggs, and lemon juice. Pour over pre-baked crust, then bake 25 minutes or until filling is set.

Cool for one hour, then cut into bars and enjoy!
