RECIPE OF THE DAY

It’s Raspberry-Blackberry season here in Kentucky and time for some pie! This pie recipe is for blackberries, but you may substitute raspberries, for an equally tasty treat.

BLACKBERRY PIE

3 Cups of Blackberries
1 Cup of Sugar
3 Tablespoons of Flour
1 Teaspoon of Lemon Juice
4 Tablespoons of Butter
2 Pie Crusts

Preheat oven to 400 degrees.

Combine flour, sugar and lemon juice. Add berries to mix, folding in gently.

Dot one pie crust with two tablespoons of butter. Pour in berries. Gently flatten, then cut second pie crust into thin strips. Cover top of pie with strips in a lattice design.

Bake in oven at 400 degrees for 15 minutes, then reduce oven heat to 325 and bake an additional 30 minutes.

Remove from oven and cool.

Serve warm or chill in fridge prior to serving, depending upon your preference.
